Watch Hill Oysters have a unique briny flavor that has become a signature for the region.
The water in which we grow our oysters if very unique in several ways. The tidal waters flowing into the pond fill and empty it twice a day providing constant nutrient rich waters for our oysters to thrive in. We raise our oysters in shallow water to take full advantage of this abundance of nutrients and food. Winnapaug Pond has no fresh water coming into it except from a small watershed area and underground aquifers that originate in the Green and White Mountains of N.H. and Vermont. The water percolates up through the granite that Westerly is famous for thereby giving our oysters their minerally taste.
