An old aphorism is that oysters are plumper and meatier in months with an “r” in the name, when some people call them “arsters.” We’ve found though there are differences in the nature of the oyster harvest during different months, and amazingly delicious flavor in the summer months too (which is fabulous because that’s a beautiful time of year in RI). Fortunately for connoisseur , RI oyster farms are able to produce dozens of varieties year-round.
