										<content:encoded><![CDATA[<div>The members of <a href="https://rioystertrail.com/ocean-state-shellfish-cooperative/">OSSC</a> have participated in reef restoration projects funded by the USDA. Most of the growers are planting oysters in areas that are in the same body of water as their farms, at growing sanctuaries designated by the Department of Environmental Management. Oyster larvae attach themselves to empty shells in a lab. The OSSC farmers take these oysters attached to shells back to their farms and raise them until they grow to about an inch in size. At this point, the oysters and shells are ready for planting. Every year, Rob Krause, Jim Arnoux and Nick Papa plant these oysters in piles measuring 10 feet square within established reef sites.</div>

<p>An old aphorism is that oysters are plumper and meatier in months with an “r” in the name, when some people call them “arsters.” We&#8217;ve found though there are differences in the nature of the oyster harvest during different months, and amazingly delicious flavor in the summer months too (which is fabulous because that&#8217;s a beautiful time of year in RI). Fortunately for connoisseur , RI oyster farms are able to produce dozens of varieties year-round.</p>

<p>Oysters have the ability to change their sex in order to keep a good balance of females and males.</p>

<p>Eating four oysters a day gives you a complete daily supply of copper, iron, iodine, magnesium, zinc and phosphorus. Legend holds that the Greek goddess of love, Aphrodite, emerged from the sea in an oyster shell — one reason oysters are considered an aphrodisiac.</p>
